Fried Rice with Chinese Sausage

Fried rice is one of my most favourite foods. I especially like the Indonesian version 'Nasi Goreng', which is very flavourful and spicy. No, it's not the kind of Nasi Goreng that you will find in so-called Asian restaurants in Germany, where the fried rice is seasoned with curry powder and topped with green peas and pieces of carrots - this type of fried rice is quite rubbish in my opinion (sorry, for sounding a bit harsh - but once you know REAL fried rice, you wouldn't want to have a second look at this dull variety of fried rice).



In this posting I will not write about how to make Indonesian fried rice, because I didn't have the ingredients in my pantry. But since I still wanted to eat fried rice today, I still made it anyway, with a twist.

I think the key to good fried rice is the rice - soggy rice is a no-no. Either use left over rice from the night before, or cook the rice with very little water in your rice-cooker, so that the rice doesn't turn up too soft. Great fried rice also has to be aromatic - so it's very important to use garlic and french shallot (or Spanish onion, if you can't find French shallot around).

My fried rice recipe here is somehow Indo-Chinese influenced, because I used typical Indonesian spices (garlic, French shallot and chilli/sambal oelek) and Chinese ingredients (pork lard, chinese sausage and oyster sauce).

Ingredients:
  • 2 cups of cooked rice
  • 2 tbs minced garlic
  • 3 tbs of minced french shallot (or even more)
  • 1 tbs sliced fresh chilli (or more, if you like it very spicy)
  • 3 tbs pork lard/oil
  • 5 tbs sliced green onions
  • 100 gr prawns
  • 1 lap cheong (Chinese sausage), sliced
  • 1-2 eggs
  • 2 tbs oyster sauce
  • 1 tbs fish sauce
  • 2 tbs kecap manis (sweet soy sauce)
  • Salt and pepper

Zutaten
  • 2 Tassen gekochter Reis
  • 2 EL gehackter Knoblauch
  • 3 EL gehackte rote Zwiebel
  • 1 EL frischer Chili / Sambal Oelek
  • 3 EL Schweineschmalz / Öl
  • 5 EL geschnittene Frühlingszwiebel
  • 100 gr Garnelen
  • 1 Chinesische Wurst (optional)
  • 1-2 Eier
  • 2 EL Austernsoße
  • 1 EL Fischsoße
  • 2 EL Kecap Manis (süße Soya Soße)
  • Salz und Pfeffer
