Coconut Chicken Bento

Two days ago I made this bento for my husband. It contains rice sprinkled with black sesame seeds topped with umebosi, stir-fried coconut chicken, two rolls of chicken sushi maki, three pieces of pan-fried gyoza and salad.

My husband really liked the stir-fried coconut chicken. Unlike me who prefers her soups and noodles, he would always opt for wok dishes.

Stir-Fried Coconut Chicken - serves 2
  • 2 chicken fillets, cut into bite-size pieces
  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce
  • 2 tablespoon Maggi seasoning
  • 1/4 cup cooking wine
  • 1/2 cup coconut juice
  • 1/2 cup cabbage, sliced thinly
  • 1/2 cup chopped green onions
  • Salt, pepper and sugar to taste
Instructions
  • Heat oil in a wok and saute chicken over medium high heat until lightly browned.
  • Add garlic, onion, cabbage, soy sauce, Maggi seasoning, salt, sugar and pepper. Stir-fry for around 2 minutes.
  • Pour in cooking wine and coconut juice and simmer for 10-15 minutes.
  • Add green onions and stir lightly before serving.

  5. Your coconut chicken sounds delicious! I had never had chicken with coconut flavor (unless it's in curry or something). I want to give it a try! I can only dream to have this kind of bento for my lunch....

  6. Sounds delicious, and beautiful as always! I had a question - did you indeed use coconut juice (like, the water stuff, right?) or did you mean coconut milk?... or maybe there's another coconut product I'm not aware of :D

  8. @Charles - thank you for your compliment :-) . I used coconut 'juice', not milk, so you're right it's the one with clear colour. Normally it's sold in little cans.

  9. Are you missing Spring or is it only my imagination that these bento boxes are greener than usually? They look lovely as always and I think I'll have chicken sushi maki very soon! I have never used coconut juice! I didn't know I could cook with it, thank you for the tip.

  12. That's so colorful! :) I will substitute chicken with eggplant (I'm a vegetarian) and try your recipe. By coconut juice, you mean the coconut milk and not the tender coconut water, right?
