Chicken Karaage & Rucola Sushi Bento

I thought about making a charaben today, but I got too lazy, so I made sushi instead ;). I I filled in the sushi rolls with chicken karaage (Japanese fried chicken), rucola, Sriracha chili sauce and mayonnaise. It was delicious...!! I was always playing safe and the only kinds of veggies I'd used so far were cucumber, lettuce, spring onions and avocado. Now I am adding rucola too and I don't regret it!

Last week I also made chicken karaage using Nami's recipe from Just One Cookbook. I still used her recipe but I added minced garlic to the chicken this time so that I can annoy my colleagues tomorrow with my bad breath...;)! *Uuppsss*

Chicken Karaage
Adapted from Just One Cookbook

2 tablespoons sake
3 tablespoons soy sauce
½ teaspoon grated ginger
1 tablespoon minced garlic
A pinch of pepper
5 skinless & boneless organic chicken thighs, cut into small pieces
1½ cup corn starch (more or less)
Oil for deep frying

Mix all ingredients (except the oil) and marinate for 30 minutes before deep frying the chicken pieces.




The left bento box contains chicken karaage drumsticks, pan-fried shao mai and one piece of radish. The right bento box contains chicken karaage/rucola/mayo/chili sauce maki sushi and a few pieces of strawberries, grapes, cherries and blueberries.



As you can see, I use this red bento box with Ikebana design quite often. The shape of this bento box makes it easy to fill. It's got a quite nice size too, not too big but also not to small.

  10. i still can't understand why there is the myth sushi rolls are hard to make. Sure until they look as perfect as yours it takes some experience but other than that it's a quick and very tasty snack!

  12. Hi CG! Thanks for the mention, and I still need to post my regular Karaage recipe... I don't like the picture, so I have to cook and re-take. By the way, that's what happened in Shrimp Tempura... I got all step-by-step picture right (including how to prep shrimp and stuff - so many photos!) but I just don't like the main picture... Ugh. You take great picture of deep fried food. Somehow mine gets too soft(?) after I cooked it. I think I take way too long to set up a camera before taking pictures. So food gets sort of "old" for photo shoot. Or simply I have no skills. LOL. Your obento oishiso~~~!

    @ Cele - You're absolutely right, sushi rolls are actually quite easy to make, but making the rice perfect, etc is the hard part, I think...

  14. @ Nami -I know what you mean about those photo sessions and then re-taking photos, etc ;). I always get annoyed everytime the photos I take don't turn out as I wish and in the end have to cancel posting something just because I don't like the photos. I still look forward to your shrimp tempura post :D)! I think your photography skills are really good, Nami. I am still wondering how people (including you) manage to blur the background and make the main dish very clear and bright, if you know what I mean...;)

  20. You tempt me too often with the chicken karaage... Maybe today is THE day to try it???
    I also put very often grilled or fried chicken in my maki rolls! Of course they don't look as nice as yours.
    So you say all I see above is made when you are "too lazy"??? Hmmm... I wonder what you would think about the dishes I prepare when I'm lazy ;-)
